Eclair or Cream Puff Shell Mix is perfect for creating cream puffs, chocolate eclairs, and even ice cream profiteroles. Fill your creations with delicious Custard Mix flavored with Icing Genius.

RECIPE:

1 lb Eclair mix; 1 lb 2 oz Hot tap water 140F

4 oz Vegetable oil.

PROCEDURE:

1. Pour Eclair Mix into Mixing Bowl preferably Kitchen Aid Mixer

2. Add water and oil mix in low speed for 30 seconds to blend all ingredients using beater.

3. Continue in high medium speed, mix it for 6 minutes

4. Put Eclair batter into piping bag. Use round or star tip to pipe on sheet pan about 30 grams for good size eclair or cream puff.

5. Bake in oven at 350F for about 35-40 minutes. Baking time may vary depend on batter weight.
